Today was one of those windy days that makes you feel like you’re not getting anywhere when you run. Susan, Shawn, and I met for a six mile run through the woods and were in pretty good shape until we ran out into the clearing . Once we turned around we were running into the face of a headwind that almost made us stand still. The wind was actually pulling my winter headband away from my ears so that I had to hold it against them to keep warm. If we’re not going to get snow, then I’m ready for spring!

I ran to the grocery store this afternoon (figuratively, not literally) 🙂 and bumped into my new client “Mike.” Remember me telling you about him? I looked into his grocery cart (I hate it when I do that) and was very pleased to see what he was purchasing. He very happily showed me his various veggies and fruits, and the healthy snacks he was buying to get him through his work days. I was thrilled that he was already putting in the effort to make healthy eating choices even though we’ve only met briefly for our initial consultation. Like I said before, I’ve got a good feeling that he’s going to be a very good student!

Speaking of healthy eating, I made a brisket for dinner. Yeah, yeah, I know it’s not the healthiest cut of beef, but I did trim all of the fat that I could off of it before I put it in the oven for four hours (chefs around the world are shaking their fingers at me right now for trimming away the moistening flavorful fat). It was so tender that it fell apart when I tried to take it out of the pan and oh so delicious! I served it with a baby spinach salad, corn, and mashed potatoes; the perfect cold winter night’s meal. My opinion is that we can eat this once in a while if the majority of our meals are healthy.
