Two weeks ago I started my five-day clean eating challenge with my running friend Beth. My goal – to simply clean up my sloppy eating habits I’d slipped back into during the cold winter months.
Our grocery list suggestions had us shopping the perimeter of the grocery store. We stayed away from processed foods, added sugar, caffeine, alcohol, and made sure we stayed well hydrated with delicious plain water. It was just what I needed for a spring reset to my less than stellar winter eating habits I’d allowed myself to slip into the last two months.
Bill loved that I made us a hot breakfast each morning. We had either scrambled eggs or hard boiled eggs each morning during the first five days, and I made steel cut oats that we topped with a little milk and strawberries, blackberries, or blueberries. It was a big change from my usual Fiber One bran cereal topped with fruit that I usually have.
A couple of days for lunch I made roll-ups with green leaf lettuce, turkey, and scallions. Sometimes I added tomatoes, cheese, and bell pepper strips. Other days I had a banana with freshly ground peanut butter, yogurt, and raw veggies (this is a typical lunch for me most days, anyway).
The first night I made tilapia with blackened redfish seasoning. We liked it so much that I made it again last week.
In the meal pictured below, I overcooked the chicken. Seriously, who overcooks food in a slow cooker? The recipe said to cook for six hours so I set my Crock Pot to 6-hours. I should have set it to 10-hours (lowest setting), and left it for six hours. The flavor was good, but it was dry. I’ll try the recipe again with the changes I mention, and check it periodically while cooking.
During the weekend and week after the challenge I have tried to continue to make good choice with my eating, AND eat things that I enjoy. I will not go on an eating plan that contains things I don’t like and denies me the opportunity to eat things I love, even if only occasionally. I’ve mentioned before that my strategy toward life is to eat well most of the time, so I can thoroughly enjoy myself some of the time, and without guilt.
While traveling to Mom’s house I stopped at Panera and had their chicken avocado salad. For fast food, it seems like a good choice. There’s a Panera that located conveniently right off the interstate about a third of the way to Mom’s house. I stopped to stretch my legs and catch up on a little blog reading while having lunch. It was lovely.

Panera has some great summer salad options for the summer, too. My favorite, the Strawberry Poppyseed Chicken salad, will be available from May to September.
Reading this reminds me that it is just as easy to eat well and cut out processed foods as it is to eat junk. We eat mostly healthy but I do rely on some convenience foods too. Fried chicken is one of those things that I never make but every once in awhile we will get it from somewhere because it is so good!!!

We only eat fried chicken when visiting Mom, and the funny thing is that she never makes it except for when we visit. Preparing healthy foods doesn’t take much longer, but you do have to plan ahead and have the fresh foods on hand. It’s so worth it though!
Nicely done! I did well for the first 20 days of my 24 day challenge, but then lost it around day 21 when we did Carry The Fallen. I had told myself I could eat whatever that day would keep me going, but then I didn’t plan on falling apart last week following the event. I’m back at it today though, I guess that’s all that matters. During the 4 weeks that I measured, I lost 6.8 lb and 7.5 inches, so that’s better than nothing. I’m just upset with myself because I could have done better.

I was glad that my challenge was only five days. It was just long enough to get me turned around, but didn’t seem so overwhelming. Embrace the positives – you lost 6.8 pounds and 7.5 inches! Hopefully you were able to get back on track today.
Breakfast and lunch are pretty easy for me. I have a few go to meals. It’s the weekend that is hard for me. I am a 90/10 clean eater and that seems to go well. Looks like you had a good week

Great job! It’s not that hard to eat clean isn’t it? The only barrier can be the prep! It takes a long time sometimes. I try to eat clean as much as possible, although lately I haven’t been that good about it.

Last week I tried to eat more nutritious instead of going for unhealthier options out of convenience. Of course I felt a lot better!
Cute that your grandparents ate like that all the time. I bet they lived long lives, too!
We always eat perogies when my whole, or Kelly’s whole, family gets together. Dough is my weakness!

It’s funny how both sets of grandparents ate like that, but neither of my parents did. They were both way ahead of the curve on healthy eating.
