There were five of us Cruisers on the trail today, and I was thrilled to see my friend Chuck back after almost a year off with a nagging hip injury! I was also happy that my hubby could join us again after a little bit of a heel injury. I had been worried that the snow on Wednesday would keep us off the trail today, but as you can see I had nothing to worry about… It was all melted!
With about 1/3 of a mile left in our 8-mile run, Bill mentioned something about picking up the pace to the end. We kicked it up a notch and finished really strong. Woot woo!!!
My personal training and weight management certifications both need renewal soon, so I took care of that this afternoon. During the past year I’ve taken these continuing education classes: TRX Suspension Training, Optimal Nutrition for Optimal Athletes, and Dynamic Core. All three were good, but I enjoyed the TRX class the most. I’ll be introducing you to TRX training soon!
I happened to be alone all afternoon and evening, so I decided to hit up Chipotle for dinner. Who doesn’t LOVE Chipotle!!! My bowl always has white rice, fajitas, black beans, chicken, pico de gallo, corn, cheese, guacamole, and lettuce. I skip the sour cream, and put plain Greek yogurt on it when I get home. If I wanted to make this healthier, I could skip the white rice and cheese.
Has anyone tried these Skinny Cow ice cream sandwiches? I picked them up at the grocery store this week, but I haven’t tried them yet. How can anything containing both chocolate and mint not be delicious? Right?

I usually kick it up at the end of a run…makes it over faster. Then I collapse and hope nobody runs me over. 😉
I do love chocolate and mint! But what I really love more is chocolate and peanut butter. Who doesn’t?! I have yet to meet a skinny cow product I didn’t like, but I haven’t tried the chocolate mint yet.
I also am a huge fan of Chipotle! My go-to is chicken salad bowl with black beans (although might try pinto after I discovered that you save a few calories over the black), fajitas, pico de gallo, corn, and green salsas. Also love guacamole, but skip it at Chipotle because they don’t go lightly on it and once it’s on my plate it will all be in my belly. I’ve been using the 100 calorie packs of Wholly Guacamole. Love the portion control, simple ingredients and I can freeze them too!
Who doesn’t like chocolate and peanut butter you ask? Me, that’s who! I cringe at the thought of it, but for good reason; and that’s a story for one of our long runs together. Stay tuned!
I’ve been working hard to end the race with everything I’ve got. It’s a lot more fun that way.
Also, mint and chocolate ARE the best combo (peanut butter and chocolate comes in a close 2nd)
AND it’s really fun passing people as you finish the race strong! 🙂
Chipotle is certainly the best. Your combo is slightly more healthy than mine (I need it inside a burrito wrap and sour cream is a must). It is absolutely my treat to myself after a long run. N doubt about it.
Seriously, is there anyone on the planet that doesn’t like Chipotle? I’ve yet to meet anyone! 🙂
Chocolate + Mint = Delicious
Love the burrito bowls at Chipotle ~ I usually go with 1/2 brown rice, no cheese (or sr. cream – good call on the greek yogurt!) and pork!

Chipotle!!! YUM!!! I have tried several of the skinny cow ice cream products but I haven’t seen the mint chocolate. Chocolate and mint is yummy but I’m more of a chocolate/caramel/peanut butter/definitely not fruit kind of person! I don’t knock something with chocolate until I try it though 🙂
The mint ice cream sandwiches are new, and very delicious! 🙂
