Yesterday I promised my youngest son Daniel that I would make tacos for dinner. HE. LOVES. TACOS… beef tacos, fish tacos, shrimp tacos; you name it, and if it’s a taco, he’s happy!
While reading Janine’s post on The Purple Giraffe, I saw her recipe for salmon and veggies cooked in aluminum foil and an idea came to me. I’d never made fish tacos, so I decided to substitute talapia for the salmon and put the fish and veggies combo on soft corn tortillas. I called my fish-taco-making-expert-friend Betty to see what seasonings she uses on her fish, and took it from there! BTW, she only uses salt and pepper.
I started by cleaning and cutting up red peppers and onions…
Then I placed the salted and peppered talapia on a piece of aluminum foil and put the veggies on top. Just before I closed the pouch, I squeezed the juice from half of a lime over it…
After I made three of these pouches of yummyness, I put them in the oven at 375 degrees for twenty minutes, checked them, and put them back in the oven until the fish was white and flaky (about 15 more minutes)…
While the fish and veggies steamed in their little foil pouches, I had a couple of these fresh salsa chips and a rare mid-week margarita…
We put the steamed fish and veggies on a soft tortilla and added Santa Fe style fish sauce, freshly sliced tomatoes, and spinach…
I really liked my first attempt at fish tacos, and I got a resounding “meh” from Bill and Daniel. What? Daniel asked that I make my tried-and-true beef tacos next time. 🙁
A friend just stopped by with these garden fresh vegetables. Am I living right or what?!?!
This morning’s run reminded me that I’m a klutz at heart. A neighboring trail that I occasionally run on has been marked to be repaired. Even with these fluorescent markings, I still managed to trip and fall! Luckily no damage was done, and I continued with my run.
I ran past this beautiful red flower growing wild by the trail. Bonus points go out to anyone that can tell me what it is. I know that I should know, but just can’t come up with it…
- Questions:
- Have you ever made fish tacos?
- What’s your favorite kind of taco?
- Do you know what flower that is?
I know that flower. It is called the “Red Debbie Trip Clutz”
Fish taco. Meh plus I am allergic! I have a great new recipe for you. Will give it to you when I get home. Tons of healthy stuff and it tastes good!
Watch your step because we all love you!
For naming the flower you win the bonus prize! You get 20 extra lunges at no additional charge the next time we meet! 🙂
But I love you! How can you be so mean! HA HA!
I’ve never tried fish tacos, but I make shrimp tacos all the time. I can’t decide whether I like shrimp tacos or beef tacos more. With my new found love of tilapia I should give fish tacos a try 🙂 sorry Bill and Daniel weren’t big fans of your tacos. They should be grateful you cooked them dinner! 🙂
I like the way you think! 🙂
My favorite kind of taco is any taco. I love mexican food so much. Must go eat some refried beans now…
I love Mexican food, too, and usually go with fajitas. Yum!!! 🙂
I with daniel – I love tacos!! Though I’m not a big fish person. My mom has been gardening a lot lately and gave me a fresh cucumber last week – it was deeeelicious!
I brought home cucumbers from my parents farm and we had just finished the last one the day before my friend brought over some more!
I love fish tacos. The best ones are with some blackened mahi. To be honest, I love all kind of tacos. I had some amazing shrimp ones from a place called The Saucy Taco that were divine, and of course, you can go wrong with the veggie tacos from Chipotle.
No idea what that flower is, but it’s beautiful.
I had planned to get mahi mahi, but the store was out. Next time I’ll get it and try blackening it. Thanks for the tip!
Um, thank you. I am coming over for dinner! I love fish tacos but am always intimidated by making them.
I’m not giving up! I’ll try another method with another type of seasoning. Perhaps I’ll get my son involved next time! 🙂
I was first introduced to fish tacos while living in Los Angeles last year, and they are DEEEElish. Although, I must admit that the most *authentic* fish tacos that I’ve found are actually made with fried fish. High-quality, fresh, lightly battered and fried – but fried nonetheless.
For a more traditional taco, I use some ground turkey and lots of seasoning!
Maybe it wasn’t that they didn’t like them, but rather that they were expecting a more traditional taco. ?
Holly, I think that you are spot on with the lightly battered and fried point. I was trying to go the healthy route. At least I liked them! 🙂
I hate the MEH after a new dinner! I love fish tacos and my mom always uses aluminum but I just can’t ever get it right!
It’s a work in progress! If you looked at Janine’s picture in the link of the salmon she made, it looked absolutely delicious. Mine didn’t look so go, but tasted great (to me, and I can be picky).
They look delicious to me!!
Thank you! 🙂
I love fish tacos and we make them all the time! We usually cook the fish in a cast iron skillet which makes the outside just a little crispy. I like to top mine with avocado slices, crunchy cabbage, sliced red peppers, and mango salsa. So good!
Sounds delicious! Yum! 🙂
I thought those fish tacos sounded yummy. Too bad they didn’t get a huge round of applause. I’ve never tried to make fish tacos. We usually do beef, turkey or chicken.
What a relief that you didn’t get hurt on your fall!
I make a mean beef taco that Daniel loves! I think Holly figured it out when she suggested that usually the fish are fried. I was trying to keep it healthy, but next time I will try frying them. 🙂
