Yesterday I promised my youngest son Daniel that I would make tacos for dinner.  HE. LOVES. TACOS…  beef tacos, fish tacos, shrimp tacos; you name it, and if it’s a taco, he’s happy!

While reading Janine’s post on The Purple Giraffe, I saw her recipe for salmon and veggies cooked in aluminum foil and an idea came to me.  I’d never made fish tacos, so I decided to substitute talapia for the salmon and put the fish and veggies combo on soft corn tortillas.  I called my fish-taco-making-expert-friend Betty to see what seasonings she uses on her fish, and took it from there!  BTW, she only uses salt and pepper.

I started by cleaning and cutting up red peppers and onions…


Then I placed the salted and peppered talapia on a piece of aluminum foil and put the veggies on top.  Just before I closed the pouch, I squeezed the juice from half of a lime over it…


After I made three of these pouches of yummyness, I put them in the oven at 375 degrees for twenty minutes, checked them, and put them back in the oven until the fish was white and flaky (about 15 more minutes)…


While the fish and veggies steamed in their little foil pouches, I had a couple of these fresh salsa chips and a rare mid-week margarita…


We put the steamed fish and veggies on a soft tortilla and added Santa Fe style fish sauce, freshly sliced tomatoes, and spinach…


I really liked my first attempt at fish tacos, and I got a resounding “meh” from Bill and Daniel.  What?  Daniel asked that I make my tried-and-true beef tacos next time.  🙁

A friend just stopped by with these garden fresh vegetables.  Am I living right or what?!?!


This morning’s run reminded me that I’m a klutz at heart.  A neighboring trail that I occasionally run on has been marked to be repaired.  Even with these fluorescent markings, I still managed to trip and fall!  Luckily no damage was done, and I continued with my run.


I ran past this beautiful red flower growing wild by the trail.  Bonus points go out to anyone that can tell me what it is.  I know that I should know, but just can’t come up with it…
